Description

Creamy mashed potato nests baked until golden and filled with a savory mixture of cheese, bacon, and vegetables for a fun, comforting appetizer or side dish.


Ingredients

  • 4 cups prepared mashed potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Filling:
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup steamed mixed vegetables (peas, carrots, corn)
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp sour cream or cream cheese
  • Chopped chives for garnish (optional)


Instructions

  1. Preheat oven to 400°F (205°C). Grease a muffin tin.
  2. In a bowl, mix mashed potatoes, egg, cheddar, Parmesan, garlic powder, salt, and pepper.
  3. Scoop potato mixture into muffin cups and use a spoon to press down the center, forming a “nest.”
  4. Bake for 15 minutes until the edges start to brown.
  5. Meanwhile, mix bacon, veggies, cheddar, and sour cream for the filling.
  6. Remove nests from the oven and spoon filling into each center.
  7. Bake an additional 8–10 minutes until cheese is melted.
  8. Let cool for 5 minutes, then remove carefully and garnish with chives.

Notes

  • Use leftover mashed potatoes for convenience.
  • Swap bacon for ham or cooked sausage.
  • Add jalapeños for a spicy version.
