Description

Crispy baked mashed potato nests filled with a savory stuffing, perfect as an appetizer or side dish with a golden exterior and creamy interior.


Ingredients

  • 3 large potatoes, peeled and boiled
  • 2 tbsp butter
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup cooked vegetables (corn, peas, or bell peppers)
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil (for greasing)


Instructions

  1. Preheat the oven to 200°C (400°F) and grease a muffin tin with olive oil.
  2. Mash the boiled potatoes with butter, milk, salt, black pepper, and garlic powder until smooth.
  3. Spoon mashed potatoes into each muffin cup and press into the sides to form nests.
  4. Fill the center of each nest with vegetables and shredded cheese.
  5. Bake for 20–25 minutes until edges are golden and crispy.
  6. Remove carefully from the tin and garnish with chopped parsley.
  7. Serve warm.

Notes

  • You can add cooked chicken or mushrooms for extra flavor.
  • Use a piping bag for neater nests.
  • Best served immediately while crispy.
