Description

Steak & Queso Rice is a hearty Tex-Mex inspired dish loaded with tender, juicy steak bites, creamy queso sauce, and fluffy rice. It’s an easy, one-pan comfort meal that combines the rich flavors of grilled steak and cheesy goodness — perfect for busy weeknights or meal prep.


Ingredients

  • 1 lb sirloin or flank steak, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 2 cups cooked white or Mexican rice
  • 1 cup queso dip or melted cheese sauce
  • ½ cup diced tomatoes (optional)
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro (optional)
  • Lime wedges, for serving


Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Season the steak pieces with chili powder, cumin, garlic powder, salt, and pepper.
  3. Add the steak to the skillet and cook for 4–6 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove and set aside.
  4. In the same skillet, add cooked rice and stir to coat in the pan drippings.
  5. Reduce heat to medium and stir in queso dip until the rice is evenly coated and creamy.
  6. Return the cooked steak to the skillet and toss everything together.
  7. Top with diced tomatoes, green onions, and cilantro before serving.
  8. Serve hot with lime wedges on the side.

  • Use leftover rice or pre-cooked rice packets to save time.
  • For extra flavor, grill or sear the steak before slicing.
  • Substitute cauliflower rice for a low-carb option.
