Description

Sweet roasted carrots layered over smooth whipped ricotta and finished with a drizzle of spicy hot honey.


Ingredients

  • 1 lb carrots, peeled and trimmed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup ricotta cheese
  • 2 tbsp heavy cream
  • 1 tsp lemon zest
  • 23 tbsp hot honey
  • 1 tbsp chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Coat the carrots with olive oil, salt, and pepper, then spread them on the baking sheet.
  3. Roast for 20–25 minutes, or until carrots are tender and caramelized.
  4. While the carrots roast, whip the ricotta, heavy cream, and lemon zest until smooth and fluffy.
  5. Spread the whipped ricotta onto a serving plate.
  6. Arrange the roasted carrots over the ricotta and drizzle generously with hot honey.
  7. Garnish with parsley if desired and serve warm.

Notes

  • Use rainbow carrots for a colorful presentation.
  • Add extra lemon zest for more brightness.
  • Hot honey can be replaced with chili-infused maple syrup.
