Description
Sweet roasted carrots layered over smooth whipped ricotta and finished with a drizzle of spicy hot honey.
Ingredients
- 1 lb carrots, peeled and trimmed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup ricotta cheese
- 2 tbsp heavy cream
- 1 tsp lemon zest
- 2–3 tbsp hot honey
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Coat the carrots with olive oil, salt, and pepper, then spread them on the baking sheet.
- Roast for 20–25 minutes, or until carrots are tender and caramelized.
- While the carrots roast, whip the ricotta, heavy cream, and lemon zest until smooth and fluffy.
- Spread the whipped ricotta onto a serving plate.
- Arrange the roasted carrots over the ricotta and drizzle generously with hot honey.
- Garnish with parsley if desired and serve warm.
Notes
- Use rainbow carrots for a colorful presentation.
- Add extra lemon zest for more brightness.
- Hot honey can be replaced with chili-infused maple syrup.
