Quick Tilapia in Roasted Pepper Sauce is a light yet flavorful dish featuring tender tilapia fillets simmered in a creamy roasted red pepper sauce with garlic, herbs, and a touch of lemon. It’s an elegant, 20-minute meal that’s perfect for busy weeknights or date nights at home.
Ingredients
- 4 tilapia fillets (about 4–6 oz each)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 jar (12 oz) roasted red peppers, drained
- ½ cup heavy cream
- ¼ cup chicken or vegetable broth
- 1 tsp smoked paprika
- ½ tsp Italian seasoning
- 1 tbsp lemon juice
- Salt and black pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Season tilapia fillets on both sides with salt, pepper, and a pinch of smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Add tilapia and sear for 2–3 minutes per side, or until lightly golden and just cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Transfer roasted red peppers, cream, broth, smoked paprika, and Italian seasoning to a blender. Blend until smooth and creamy.
- Pour the blended sauce into the skillet and simmer for 3–4 minutes over medium heat until slightly thickened.
- Stir in lemon juice and adjust seasoning with salt and pepper.
- Return the tilapia to the skillet, spooning the sauce over the fillets. Simmer for 1–2 minutes to heat through.
- Garnish with fresh parsley or basil and serve immediately over rice, pasta, or vegetables.
