Quick Tilapia in Roasted Pepper Sauce is a light yet flavorful dish featuring tender tilapia fillets simmered in a creamy roasted red pepper sauce with garlic, herbs, and a touch of lemon. It’s an elegant, 20-minute meal that’s perfect for busy weeknights or date nights at home.


Ingredients

  • 4 tilapia fillets (about 46 oz each)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 jar (12 oz) roasted red peppers, drained
  • ½ cup heavy cream
  • ¼ cup chicken or vegetable broth
  • 1 tsp smoked paprika
  • ½ tsp Italian seasoning
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish


Instructions

  1. Season tilapia fillets on both sides with salt, pepper, and a pinch of smoked paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add tilapia and sear for 2–3 minutes per side, or until lightly golden and just cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Transfer roasted red peppers, cream, broth, smoked paprika, and Italian seasoning to a blender. Blend until smooth and creamy.
  5. Pour the blended sauce into the skillet and simmer for 3–4 minutes over medium heat until slightly thickened.
  6. Stir in lemon juice and adjust seasoning with salt and pepper.
  7. Return the tilapia to the skillet, spooning the sauce over the fillets. Simmer for 1–2 minutes to heat through.
  8. Garnish with fresh parsley or basil and serve immediately over rice, pasta, or vegetables.
