Description

A comforting Portuguese-style chicken and rice dish made with tender chicken pieces simmered in a flavorful tomato, garlic, and paprika-infused broth, resulting in rich, savory rice.


Ingredients

  • 1 kg chicken pieces (thighs or drumsticks)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup crushed tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken pieces and brown on all sides. Remove and set aside.
  3. In the same pot, add chopped onion and cook until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in crushed tomatoes, paprika, smoked paprika, cumin, salt, and black pepper.
  6. Add the rice and stir to coat with the sauce.
  7. Pour in chicken broth and add the bay leaf.
  8. Return the chicken to the pot, cover, and simmer on low heat for 25–30 minutes until the rice is tender and the chicken is fully cooked.
  9. Remove bay leaf, garnish with fresh parsley, and serve hot.

  • Use bone-in chicken for deeper flavor.
