Description
A comforting Portuguese-style chicken and rice dish made with tender chicken pieces simmered in a flavorful tomato, garlic, and paprika-infused broth, resulting in rich, savory rice.
Ingredients
- 1 kg chicken pieces (thighs or drumsticks)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup crushed tomatoes
- 1 teaspoon paprika
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken pieces and brown on all sides. Remove and set aside.
- In the same pot, add chopped onion and cook until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in crushed tomatoes, paprika, smoked paprika, cumin, salt, and black pepper.
- Add the rice and stir to coat with the sauce.
- Pour in chicken broth and add the bay leaf.
- Return the chicken to the pot, cover, and simmer on low heat for 25–30 minutes until the rice is tender and the chicken is fully cooked.
- Remove bay leaf, garnish with fresh parsley, and serve hot.

- Use bone-in chicken for deeper flavor.
- You can add peas or bell peppers for extra color and nutrition.
- Let the dish rest for 5 minutes before serving for best texture.
