Description
Soft, baked yeast rolls stuffed with a savory mixture of ground beef, cabbage, and onions—an easy handheld dinner also known as runzas or bierocks.
Ingredients
- Dough:
- 1 cup warm milk (110°F)
- 2 1/4 tsp active dry yeast
- 2 tbsp granulated sugar
- 1 large egg
- 3 tbsp melted butter
- 3–3 1/2 cups all-purpose flour
- 1 tsp salt
- Filling:
- 1 lb ground beef
- 3 cups chopped green cabbage
- 1 medium onion, diced
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp oil or butter for sautéing
- 1 tbsp melted butter for brushing
Instructions
- In a bowl, combine warm milk, yeast, and sugar. Let stand 5 minutes until foamy.
- Mix in egg and melted butter. Add salt and flour gradually, kneading until a soft dough forms. Cover and rise 1 hour.
- For the filling, heat oil in a skillet. Add ground beef and cook until browned.
- Add onion, cabbage, Worcestershire sauce, garlic powder, salt, and pepper. Cook until cabbage is soft and mixture is well blended. Cool slightly.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
- Punch down dough and divide into 8–10 balls. Roll each into a 5–6 inch circle.
- Spoon filling into the center of each dough round. Pinch edges to seal and place seam-side down on the tray.
- Bake for 18–22 minutes or until golden brown.
- Brush with melted butter and serve warm.
Notes
- Let the filling cool to avoid making the dough soggy.
- Add shredded cheese for a richer version.
- These freeze well—reheat in the oven for best texture.
