Description

Soft, baked yeast rolls stuffed with a savory mixture of ground beef, cabbage, and onions—an easy handheld dinner also known as runzas or bierocks.

Ingredients

  • Dough:
  • 1 cup warm milk (110°F)
  • 2 1/4 tsp active dry yeast
  • 2 tbsp granulated sugar
  • 1 large egg
  • 3 tbsp melted butter
  • 33 1/2 cups all-purpose flour
  • 1 tsp salt
  • Filling:
  • 1 lb ground beef
  • 3 cups chopped green cabbage
  • 1 medium onion, diced
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tbsp oil or butter for sautéing
  • 1 tbsp melted butter for brushing

Instructions

  1. In a bowl, combine warm milk, yeast, and sugar. Let stand 5 minutes until foamy.
  2. Mix in egg and melted butter. Add salt and flour gradually, kneading until a soft dough forms. Cover and rise 1 hour.
  3. For the filling, heat oil in a skillet. Add ground beef and cook until browned.
  4. Add onion, cabbage, Worcestershire sauce, garlic powder, salt, and pepper. Cook until cabbage is soft and mixture is well blended. Cool slightly.
  5. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
  6. Punch down dough and divide into 8–10 balls. Roll each into a 5–6 inch circle.
  7. Spoon filling into the center of each dough round. Pinch edges to seal and place seam-side down on the tray.
  8. Bake for 18–22 minutes or until golden brown.
  9. Brush with melted butter and serve warm.

Notes

  • Let the filling cool to avoid making the dough soggy.
  • Add shredded cheese for a richer version.
  • These freeze well—reheat in the oven for best texture.
