Description

These crispy garlic butter potatoes are golden and crunchy on the outside, soft and fluffy on the inside, and infused with rich garlic butter and herbs — the perfect side dish for any meal.


Ingredients

  • 1.5 lbs (700g) baby potatoes, halved
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (or fresh herbs like rosemary or parsley)
  • 2 tbsp grated Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large pot of salted water, parboil the halved potatoes for about 8–10 minutes until just tender, then drain well.
  3. In a large bowl, whisk together the melted butter, olive oil, minced garlic, salt, pepper, and thyme.
  4. Add the potatoes to the bowl and toss until evenly coated with the butter mixture.
  5. Spread the potatoes cut-side down on the prepared baking sheet in a single layer.
  6. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
  7. Sprinkle with Parmesan cheese and fresh herbs before serving, if desired.

Notes

  • For extra crispiness, allow the potatoes to cool for a few minutes before serving.
  • You can use ghee instead of butter for a richer flavor.
