Description
These crispy garlic butter potatoes are golden and crunchy on the outside, soft and fluffy on the inside, and infused with rich garlic butter and herbs — the perfect side dish for any meal.
Ingredients
- 1.5 lbs (700g) baby potatoes, halved
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme (or fresh herbs like rosemary or parsley)
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large pot of salted water, parboil the halved potatoes for about 8–10 minutes until just tender, then drain well.
- In a large bowl, whisk together the melted butter, olive oil, minced garlic, salt, pepper, and thyme.
- Add the potatoes to the bowl and toss until evenly coated with the butter mixture.
- Spread the potatoes cut-side down on the prepared baking sheet in a single layer.
- Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
- Sprinkle with Parmesan cheese and fresh herbs before serving, if desired.
Notes
- For extra crispiness, allow the potatoes to cool for a few minutes before serving.
- You can use ghee instead of butter for a richer flavor.
