Description
Tender roasted cauliflower coated in a rich, creamy, sun-dried tomato and Parmesan sauce inspired by the popular “Marry Me” chicken flavor profile.
Ingredients
- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped sun-dried tomatoes
- 1/2 tsp red pepper flakes
- 1 tsp Italian seasoning
- Fresh basil, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss cauliflower florets with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Roast for 25–30 minutes, flipping halfway, until golden and tender.
- Meanwhile, melt butter in a skillet over medium heat. Add garlic and cook for 1 minute.
- Stir in heavy cream, Parmesan, sun-dried tomatoes, red pepper flakes, and Italian seasoning.
- Simmer for 3–4 minutes until thickened.
- Add roasted cauliflower to the skillet and toss to coat in the sauce.
- Garnish with fresh basil and serve warm.
Notes
- Add more red pepper flakes for extra heat.
- Serve as a side dish or over pasta for a full meal.
- Use half-and-half instead of heavy cream for a lighter version.
