Description

Tender roasted cauliflower coated in a rich, creamy, sun-dried tomato and Parmesan sauce inspired by the popular “Marry Me” chicken flavor profile.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • Fresh basil, chopped (for garnish)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 25–30 minutes, flipping halfway, until golden and tender.
  4. Meanwhile, melt butter in a skillet over medium heat. Add garlic and cook for 1 minute.
  5. Stir in heavy cream, Parmesan, sun-dried tomatoes, red pepper flakes, and Italian seasoning.
  6. Simmer for 3–4 minutes until thickened.
  7. Add roasted cauliflower to the skillet and toss to coat in the sauce.
  8. Garnish with fresh basil and serve warm.

Notes

  • Add more red pepper flakes for extra heat.
  • Serve as a side dish or over pasta for a full meal.
  • Use half-and-half instead of heavy cream for a lighter version.
