Description
Creamy, flavorful chicken pasta with sun-dried tomatoes and Parmesan in a rich sauce so good it might just earn a marriage proposal.
Ingredients
- 1 lb boneless skinless chicken breasts, sliced
- 12 oz pasta (penne or fettuccine)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and black pepper, to taste
- Fresh basil, chopped (optional garnish)
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper and cook until golden and cooked through; remove and set aside.
- In the same skillet, add garlic and cook until fragrant.
- Stir in sun-dried tomatoes and Italian seasoning.
- Pour in chicken broth and heavy cream, stirring to combine.
- Simmer for 5 minutes until sauce slightly thickens.
- Stir in Parmesan cheese and red pepper flakes.
- Return chicken to the skillet and mix well.
- Add cooked pasta and toss until evenly coated.
- Garnish with fresh basil and serve warm.
Notes
- Use freshly grated Parmesan for best flavor.
- Adjust red pepper flakes for desired heat.
- Serve with garlic bread or a green salad.
