Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup cranberry sauce (whole berry preferred)
  • 6 oz brie cheese, sliced
  • 2 tbsp fresh rosemary or thyme, chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Toothpicks for securing


Instructions

  1. Preheat oven to 400°F (205°C). Grease a baking dish.
  2. Use a sharp knife to cut a deep pocket into each chicken breast.
  3. Stuff each pocket with slices of brie and a spoonful of cranberry sauce.
  4. Sprinkle with chopped rosemary or thyme and secure the opening with toothpicks.
  5. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush over the chicken.
  6. Place chicken in the baking dish and bake 22–28 minutes, until internal temperature reaches 165°F (74°C).
  7. Optional: Broil for 1–2 minutes to lightly brown the top.
  8. Let rest 5 minutes, remove toothpicks, and serve with extra cranberry sauce.
