Ingredients
- 1 box (8.5 oz) cornbread mix
- 1 cup whole kernel corn, drained
- 1 cup creamed corn
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 green onions, sliced
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, combine cornbread mix, eggs, milk, and melted butter.
- Stir in whole corn, creamed corn, sour cream, and seasonings.
- Fold in shredded cheese and green onions.
- Pour mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes until golden brown and set in the center.
- Remove from oven and let rest for 5–10 minutes before serving.
Notes
- Add diced jalapeños for a spicy kick.
- Serve as a side dish with barbecue or fried foods.
