Ingredients

  • 1 whole salmon side (about 22.5 lb), skin on
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 lemon, thinly sliced
  • 1 orange, thinly sliced
  • 3 cloves garlic, finely sliced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp unsalted butter, cut into small cubes
  • 1 tbsp Dijon mustard
  • Optional: capers for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a baking tray with parchment paper and place the salmon skin-side down.
  3. Rub salmon with olive oil, salt, and black pepper.
  4. Spread Dijon mustard lightly over the flesh.
  5. Arrange lemon and orange slices over the salmon.
  6. Scatter garlic, dill, and parsley evenly on top.
  7. Dot the salmon with butter cubes.
  8. Cover loosely with foil and bake for 15 minutes.
  9. Remove foil and bake an additional 10–12 minutes until just cooked through.
  10. Rest 5 minutes, garnish with capers if desired, and serve.
