Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 2 tbsp brown sugar
  • 1 cup milk
  • 1/4 cup molasses
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract


Instructions

  1. Whisk flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, cloves, and brown sugar in a large bowl.
  2. In a separate bowl, mix milk, molasses, egg, melted butter, and vanilla.
  3. Pour wet ingredients into dry and stir just until combined.
  4. Heat a greased skillet or griddle over medium heat.
  5. Cook 1/4-cup scoops of batter until bubbles form, then flip and cook until golden.
  6. Serve warm with butter, syrup, or whipped cream.

Notes

  • Do not overmix to keep pancakes fluffy.
  • Add a splash more milk if batter seems too thick.
