Ingredients
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 2 tbsp brown sugar
- 1 cup milk
- 1/4 cup molasses
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Whisk flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, cloves, and brown sugar in a large bowl.
- In a separate bowl, mix milk, molasses, egg, melted butter, and vanilla.
- Pour wet ingredients into dry and stir just until combined.
- Heat a greased skillet or griddle over medium heat.
- Cook 1/4-cup scoops of batter until bubbles form, then flip and cook until golden.
- Serve warm with butter, syrup, or whipped cream.
Notes
- Do not overmix to keep pancakes fluffy.
- Add a splash more milk if batter seems too thick.
- Try buttermilk for extra tenderness and tang.
