Ingredients
- 1 baguette, sliced into 1/2-inch rounds
- 2 tbsp olive oil, divided
- 1 lb large shrimp, peeled and deveined
- 3 cloves garlic, minced
- Salt and black pepper, to taste
- 1 tbsp lemon juice
- 2 ripe avocados
- 1 tbsp fresh lime juice
- 1 tbsp fresh cilantro or parsley, chopped
- Optional: red pepper flakes for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Arrange baguette slices on a baking sheet and brush lightly with 1 tablespoon olive oil.
- Bake for 8–10 minutes until golden and crisp; set aside.
- Season shrimp with salt and black pepper.
- Heat remaining olive oil in a skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add shrimp and cook 2–3 minutes per side until pink and cooked through.
- Finish shrimp with lemon juice and remove from heat.
- In a bowl, mash avocados with lime juice, salt, and herbs.
- Spread avocado mixture onto crostini.
- Top with garlic shrimp and garnish with red pepper flakes if desired.
- Serve immediately.
