These Crispy Roasted Garlic Parmesan Potato Stacks are thinly sliced potatoes layered with butter, garlic, and Parmesan cheese, then roasted until golden and crisp on the edges with a soft, creamy center. They make an elegant yet simple side dish perfect for holidays or any dinner.
Ingredients
- 2 lbs Yukon Gold potatoes, thinly sliced (about 1/8-inch thick)
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- ½ tsp salt
- ¼ tsp black pepper
- Nonstick cooking spray
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with nonstick spray.
- In a large bowl, combine melted butter, olive oil, minced garlic, thyme, salt, and pepper.
- Add potato slices and toss until evenly coated in the butter mixture.
- Layer 6–8 slices of potato in each muffin cup, sprinkling a little Parmesan cheese between layers.
- Top each stack with a final sprinkle of Parmesan.
- Bake for 40–45 minutes, or until potatoes are golden, crisp on the edges, and tender in the center.
- Let cool for 5 minutes, then gently remove from muffin tin with a spoon.
- Garnish with chopped parsley and serve warm.
Notes
- Use a mandoline slicer for evenly thin potato slices.
- Substitute Parmesan with Asiago or Gruyère for a different flavor.
- These can be prepared ahead of time and reheated in the oven to crisp them up again.
