Description

These Crispy Roasted Garlic Parmesan Potato Stacks are thinly sliced potatoes layered with butter, garlic, and Parmesan cheese, then roasted until golden and crisp on the edges with a soft, creamy center. They make an elegant yet simple side dish perfect for holidays or any dinner.


Ingredients

  • 2 lbs Yukon Gold potatoes, thinly sliced (about 1/8-inch thick)
  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • ½ tsp salt
  • ¼ tsp black pepper
  • Nonstick cooking spray
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with nonstick spray.
  2. In a large bowl, combine melted butter, olive oil, minced garlic, thyme, salt, and pepper.
  3. Add potato slices and toss until evenly coated in the butter mixture.
  4. Layer 6–8 slices of potato in each muffin cup, sprinkling a little Parmesan cheese between layers.
  5. Top each stack with a final sprinkle of Parmesan.
  6. Bake for 40–45 minutes, or until potatoes are golden, crisp on the edges, and tender in the center.
  7. Let cool for 5 minutes, then gently remove from muffin tin with a spoon.
  8. Garnish with chopped parsley and serve warm.

Notes

  • Use a mandoline slicer for evenly thin potato slices.
  • Substitute Parmesan with Asiago or Gruyère for a different flavor.
  • These can be prepared ahead of time and reheated in the oven to crisp them up again.
