Description
Gardener’s Pie with Root Vegetable Mash is a hearty vegetarian comfort dish featuring a savory vegetable filling topped with creamy mashed root vegetables and baked until golden.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup mushrooms, chopped
- 1 zucchini, diced
- 1 cup green peas
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt to taste
- Black pepper to taste
- 1 cup vegetable broth
- 2 cups potatoes, peeled and cubed
- 1 cup carrots, peeled and cubed (for mash)
- 1 cup parsnips, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
Instructions
- Preheat oven to 200°C (400°F).
- Boil potatoes, carrots, and parsnips in salted water for 15–20 minutes until tender.
- Drain and mash with butter and milk until smooth. Season with salt and pepper.
- Meanwhile, heat olive oil in a skillet over medium heat.
- Sauté onion and garlic until softened.
- Add diced carrots, mushrooms, and zucchini, cooking until tender.
- Stir in tomato paste, thyme, rosemary, salt, and pepper.
- Add peas and vegetable broth; simmer for 5–7 minutes until slightly thickened.
- Transfer vegetable mixture to a baking dish.
- Spread root vegetable mash evenly over the top.
- Bake for 20–25 minutes until lightly golden.
- Let rest 5 minutes before serving.
Notes
- Use sweet potatoes or turnips for variation in the mash.
- For a vegan version, substitute butter and milk with plant-based alternatives.
- Broil for 2–3 minutes for a crispier top.
