Description

Gardener’s Pie with Root Vegetable Mash is a hearty vegetarian comfort dish featuring a savory vegetable filling topped with creamy mashed root vegetables and baked until golden.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup mushrooms, chopped
  • 1 zucchini, diced
  • 1 cup green peas
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt to taste
  • Black pepper to taste
  • 1 cup vegetable broth
  • 2 cups potatoes, peeled and cubed
  • 1 cup carrots, peeled and cubed (for mash)
  • 1 cup parsnips, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk


Instructions

  1. Preheat oven to 200°C (400°F).
  2. Boil potatoes, carrots, and parsnips in salted water for 15–20 minutes until tender.
  3. Drain and mash with butter and milk until smooth. Season with salt and pepper.
  4. Meanwhile, heat olive oil in a skillet over medium heat.
  5. Sauté onion and garlic until softened.
  6. Add diced carrots, mushrooms, and zucchini, cooking until tender.
  7. Stir in tomato paste, thyme, rosemary, salt, and pepper.
  8. Add peas and vegetable broth; simmer for 5–7 minutes until slightly thickened.
  9. Transfer vegetable mixture to a baking dish.
  10. Spread root vegetable mash evenly over the top.
  11. Bake for 20–25 minutes until lightly golden.
  12. Let rest 5 minutes before serving.

Notes

  • Use sweet potatoes or turnips for variation in the mash.
  • For a vegan version, substitute butter and milk with plant-based alternatives.
  • Broil for 2–3 minutes for a crispier top.
