Description

Easy Cheesy Ground Beef Enchiladas are a comforting, flavor-packed Mexican-inspired dish made with seasoned ground beef, melty cheese, and soft tortillas smothered in a rich enchilada sauce. Perfect for weeknight dinners and loved by the whole family.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning or 2 tablespoons homemade seasoning
  • 1/2 cup water
  • 2 cups shredded cheddar or Mexican blend cheese (divided)
  • 1012 corn or flour tortillas
  • 2 cups red enchilada sauce
  • 1/4 cup chopped cilantro (optional)
  • Sour cream (for serving)
  • Green onions (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onions and cook 3–4 minutes until softened.
  3. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  4. Stir in garlic, taco seasoning, and water. Simmer for 2–3 minutes until thickened. Remove from heat and mix in 1 cup of shredded cheese.
  5. Warm tortillas in the microwave for 20–30 seconds to soften.
  6. Spoon a small amount of enchilada sauce onto the bottom of the baking dish.
  7. Fill each tortilla with 2–3 tablespoons of the beef mixture, roll tightly, and place seam-side down in the dish.
  8. Pour remaining enchilada sauce evenly over the tortillas.
  9. Top with the remaining cheese.
  10. Bake for 20–25 minutes or until cheese is melted and bubbly.
  11. Garnish with cilantro, sour cream, and green onions before serving.

Notes

  • Use ground turkey or chicken as a lighter alternative.
  • Add black beans or corn to the filling for more texture.
  • For extra flavor, mix a little cream cheese into the beef filling.
  • Double the batch and freeze one pan for later.
