Easy Cheesy Ground Beef Enchiladas are a comforting, flavor-packed Mexican-inspired dish made with seasoned ground beef, melty cheese, and soft tortillas smothered in a rich enchilada sauce. Perfect for weeknight dinners and loved by the whole family.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 packet taco seasoning or 2 tablespoons homemade seasoning
- 1/2 cup water
- 2 cups shredded cheddar or Mexican blend cheese (divided)
- 10–12 corn or flour tortillas
- 2 cups red enchilada sauce
- 1/4 cup chopped cilantro (optional)
- Sour cream (for serving)
- Green onions (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add onions and cook 3–4 minutes until softened.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Stir in garlic, taco seasoning, and water. Simmer for 2–3 minutes until thickened. Remove from heat and mix in 1 cup of shredded cheese.
- Warm tortillas in the microwave for 20–30 seconds to soften.
- Spoon a small amount of enchilada sauce onto the bottom of the baking dish.
- Fill each tortilla with 2–3 tablespoons of the beef mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining enchilada sauce evenly over the tortillas.
- Top with the remaining cheese.
- Bake for 20–25 minutes or until cheese is melted and bubbly.
- Garnish with cilantro, sour cream, and green onions before serving.
Notes
- Use ground turkey or chicken as a lighter alternative.
- Add black beans or corn to the filling for more texture.
- For extra flavor, mix a little cream cheese into the beef filling.
- Double the batch and freeze one pan for later.
