A rich, comforting German-style goulash made with tender beef simmered in a creamy paprika sauce for a hearty and satisfying meal.
Ingredients
- 2 lbs beef stew meat, cut into chunks
- 2 tbsp vegetable oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tbsp sweet paprika
- 1 tbsp tomato paste
- 1 tsp caraway seeds (optional but traditional)
- 1 tsp salt
- 1/2 tsp black pepper
- 3 cups beef broth
- 1 cup heavy cream or sour cream
- 2 tbsp flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the oil over medium-high heat. Brown the beef on all sides, working in batches if needed.
- Add the onion and cook until softened, about 5 minutes. Stir in the garlic, paprika, tomato paste, and caraway seeds.
- Add salt, pepper, and beef broth. Bring to a simmer.
- Reduce heat, cover, and cook for 1.5–2 hours, or until the beef is tender.
- In a small bowl, whisk together the heavy cream (or sour cream) and flour. Stir into the goulash.
- Simmer uncovered for 10–15 minutes to thicken.
- Taste and adjust seasonings. Garnish with fresh parsley before serving.
Notes
- Serve with egg noodles, spaetzle, mashed potatoes, or crusty bread.
- Use sour cream instead of heavy cream for a tangier flavor.
- For extra depth, add a splash of red wine while simmering.
- The goulash tastes even better the next day.
