Description

Cheesy Taco Potatoes are a hearty, flavorful dish made with tender roasted potatoes topped with seasoned taco meat, melty cheese, and all your favorite taco toppings. It’s an easy crowd-pleasing meal or side that’s perfect for weeknights, game days, or family dinners.


Ingredients

  • 4 cups diced russet or gold potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup sour cream (for topping)
  • 1/4 cup salsa or pico de gallo
  • 2 green onions, sliced
  • Optional toppings: jalapeños, avocado, cilantro


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread potatoes evenly on the baking sheet and roast for 25–30 minutes, turning halfway through, until crispy and golden.
  4. Meanwhile, brown the ground beef in a skillet over medium heat. Drain extra fat if needed.
  5. Add taco seasoning and water. Simmer for 2–3 minutes until thickened.
  6. Once potatoes are done, transfer them to an oven-safe dish or cast iron skillet.
  7. Top with the cooked taco meat and sprinkle cheese evenly over the top.
  8. Return to the oven for 5–7 minutes or until cheese is melted and bubbly.
  9. Garnish with sour cream, salsa, green onions, and any additional toppings. Serve warm.
