Description

Crispy roasted potatoes tossed with taco seasoning and smothered in melted cheese, creating an easy and irresistible side dish or meatless main.


Ingredients

  • 2 lbs baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 1 packet taco seasoning
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, chopped green onions, diced tomatoes, chopped cilantro


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss potatoes with olive oil, taco seasoning, garlic powder, paprika, salt, and black pepper.
  3. Spread potatoes in a single layer on the baking sheet.
  4. Roast for 30–35 minutes, flipping halfway, until golden and crispy.
  5. Remove from oven and sprinkle cheeses evenly over the potatoes.
  6. Return to oven for 5–7 minutes until cheese is melted and bubbly.
  7. Add desired toppings and serve hot.
