Description

Ingredients
- 2 lbs baby potatoes, halved or quartered
- 2 tbsp olive oil
- 1 packet taco seasoning
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: sour cream, chopped green onions, diced tomatoes, chopped cilantro
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss potatoes with olive oil, taco seasoning, garlic powder, paprika, salt, and black pepper.
- Spread potatoes in a single layer on the baking sheet.
- Roast for 30–35 minutes, flipping halfway, until golden and crispy.
- Remove from oven and sprinkle cheeses evenly over the potatoes.
- Return to oven for 5–7 minutes until cheese is melted and bubbly.
- Add desired toppings and serve hot.
