Description
A comforting family-style casserole made with seasoned ground beef, tender rice, and plenty of melted cheese baked together into a hearty, satisfying meal.
Ingredients
- 1 lb ground beef
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a casserole dish.
- Heat olive oil in a skillet over medium heat.
- Add ground beef and onion and cook until beef is browned.
- Add garlic, paprika, salt, and pepper; cook for 1 minute.
- Stir in uncooked rice, beef broth, and cream of mushroom soup.
- Transfer mixture to the prepared casserole dish.
- Cover tightly with foil and bake for 40 minutes.
- Remove foil, sprinkle cheeses evenly on top.
- Return to oven uncovered and bake for 10–15 minutes until cheese is melted and bubbly.
- Let rest 5 minutes, garnish if desired, and serve.
Notes
- Use instant rice to reduce cooking time.
- Add vegetables like peas or bell peppers for extra nutrition.
- Leftovers store well in the refrigerator for up to 3 days.
