Ingredients

  • 1 lb ground beef
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: chopped parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Heat olive oil in a skillet over medium heat.
  3. Add ground beef and onion and cook until beef is browned.
  4. Add garlic, paprika, salt, and pepper; cook for 1 minute.
  5. Stir in uncooked rice, beef broth, and cream of mushroom soup.
  6. Transfer mixture to the prepared casserole dish.
  7. Cover tightly with foil and bake for 40 minutes.
  8. Remove foil, sprinkle cheeses evenly on top.
  9. Return to oven uncovered and bake for 10–15 minutes until cheese is melted and bubbly.
  10. Let rest 5 minutes, garnish if desired, and serve.
