Ingredients

  • 1 large bag tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup sliced black olives
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1 tbsp olive oil (for greasing pan)
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a Bundt pan generously with olive oil.
  3. Layer tortilla chips evenly in the pan.
  4. Sprinkle a mix of cheeses, black beans, corn, olives, tomatoes, and jalapeños over the chips.
  5. Repeat layers until ingredients are used, ending with cheese on top.
  6. Bake for 20–25 minutes until cheese is fully melted and bubbly.
  7. Remove from oven and let cool for 5 minutes.
  8. Carefully invert onto a serving plate.
  9. Top with sour cream, guacamole, salsa, or cilantro as desired.
