Description
Flavor-packed Bang Bang Chicken Fried Rice made with crispy chicken, fluffy rice, vegetables, and a creamy sweet-spicy bang bang sauce.
Ingredients
- 2 cups cooked jasmine rice, cooled
- 1 lb boneless skinless chicken breast, diced
- 2 tbsp cornstarch
- Salt and black pepper, to taste
- 2 tbsp vegetable oil
- 2 large eggs, beaten
- 1 cup frozen mixed vegetables (peas and carrots)
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1/3 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to taste)
- 2 green onions, sliced
Instructions
- Toss chicken with cornstarch, salt, and black pepper.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until crispy and cooked through; remove and set aside.
- In the same skillet, add eggs and scramble until just set.
- Add garlic and mixed vegetables; cook for 1–2 minutes.
- Add cooked rice and stir-fry until heated through.
- Stir in soy sauce and sesame oil.
- In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha.
- Return chicken to the skillet and drizzle with bang bang sauce.
- Toss everything together until well coated.
- Garnish with green onions and serve hot.
Notes
- Use day-old rice for best texture.
- Adjust spice level by increasing or reducing sriracha.
- Can substitute shrimp for chicken.
