Description

Flavor-packed Bang Bang Chicken Fried Rice made with crispy chicken, fluffy rice, vegetables, and a creamy sweet-spicy bang bang sauce.


Ingredients

  • 2 cups cooked jasmine rice, cooled
  • 1 lb boneless skinless chicken breast, diced
  • 2 tbsp cornstarch
  • Salt and black pepper, to taste
  • 2 tbsp vegetable oil
  • 2 large eggs, beaten
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/3 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 2 green onions, sliced


Instructions

  1. Toss chicken with cornstarch, salt, and black pepper.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until crispy and cooked through; remove and set aside.
  4. In the same skillet, add eggs and scramble until just set.
  5. Add garlic and mixed vegetables; cook for 1–2 minutes.
  6. Add cooked rice and stir-fry until heated through.
  7. Stir in soy sauce and sesame oil.
  8. In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha.
  9. Return chicken to the skillet and drizzle with bang bang sauce.
  10. Toss everything together until well coated.
  11. Garnish with green onions and serve hot.

Notes

  • Use day-old rice for best texture.
  • Adjust spice level by increasing or reducing sriracha.
  • Can substitute shrimp for chicken.
