A decadent dessert that combines creamy cheesecake with spiced apple filling and a buttery oat crisp topping for the ultimate fall-inspired treat.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar (for topping)
  • 1/2 tsp cinnamon (for topping)
  • 1/2 cup cold unsalted butter, cubed


Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs with melted butter and press firmly into the bottom of the pan.
  3. In a bowl, beat cream cheese and granulated sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in vanilla extract and sour cream.
  6. Pour cheesecake batter over the crust.
  7. In a separate bowl, toss apples with brown sugar, cinnamon, nutmeg, and lemon juice.
  8. Spoon apple mixture evenly over the cheesecake batter.
  9. In another bowl, combine flour, oats, brown sugar, and cinnamon.
  10. Cut in cold butter until crumbly and sprinkle over apples.
  11. Bake for 60–70 minutes until center is set.
  12. Turn off oven, crack door, and cool cheesecake for 1 hour.
  13. Refrigerate at least 4 hours before serving.

Notes

  • Use Granny Smith or Honeycrisp apples for best results.
  • Chill overnight for clean slices.
  • Serve with whipped cream or caramel sauce if desired.
